“We need a local place,” said the Holmeses, “where everyone can simply hang out and have really good pub food,” said the Industry Veterans. Well, Tim and Colleen Holmes now have Sonny and Julie Bonacio to thank for their newly built bar & grille, BWP, located in the stunning Springs apartment complex on Weibel Avenue.
Opened on Saturday 9/20, Corey Armstrong, director of operations, thanks the team’s passion around tasty pub-food for the fun; “the menus were a blast to develop. We all worked really hard eating burgers, pizza, tasting boutique wines and drinking craft beers”.
Co-owner Colleen Holmes brought her Burger Sauce with her to BWP and Kaleb Bright improved upon it to make the spectacular dipping sauce for her favorite menu item, the Cheddar Bites. The culinary team collaborated on BWP’s “secret” BurgerSpice. After several go arounds, the “secret” BurgerSpice which now enhances the grilled chicken sandwiches as well, was determined. The team is addicted to the Burger Sauce flavor and put it on just about everything! “You will too!” said BWP General Manager Jeff Taylor, “and I won’t even say I told you so.”

Colleen O’Bryan Holmes – Cofounder, Managing Partner
Colleen has worked successfully in the food and beverage industry for over twenty-five years. As an owner/operator of WOW Restaurants in Saratoga Springs and Clifton Park, New York she enjoys applying those years towards training and developing the management team and staff and marketing the restaurants. Formerly a General Manager for Lettuce Entertain You Enterprises of Chicago, she lead and managed several of Chicago’s finest restaurants. Colleen has been responsible for all aspects of operations, having a wide range of experience from fine dining to casual themed restaurants and banquet/catering facilities. Leading and motivating 150 employees and training one on one are among her specialties. Colleen’s passion, creativity and attention to detail make her a leader in the hospitality industry.
Colleen was the first female Chairman of the New York State Restaurant Association from 2012-2013. Currently she sits on the Saratoga Springs Business Advisory Council and the Special Assessment District Council and holds a Bachelors of Science degree from Michigan State University.
Timothy D. Holmes – Cofounder, Managing Partner
Tim has worked successfully in the food and beverage business for over twenty-five years. Throughout his tenure as Vice President, Managing Partner, of Lettuce Entertain You Enterprises in Chicago, he owned, operated and created multiple restaurant concepts; 1995 Brasserie Jo, a 225 seat 1940’s Parisian style brasserie; 1997 Heaven on Seven, a 150-seat full service Cajun/Creole concept; 1998 Brasserie Jo’s second location, Boston Massachusetts; 2001 Petterino’s, a 200-seat Italian Chop House; 1998-2000 Lettuce Catering, a full service off-premise catering company. As Director of Operations, Tim was responsible for the creation, decision- making, planning, financial performance and operations of these concepts. Tim’s leadership directed over twenty managers and five hundred employees. Currently as owner and operator of WOW Restaurants in Saratoga Springs and Clifton Park, New York, he enjoys leading the teams, developing the concepts, and always looking forward to the next project.
Tim is President of the Saratoga Springs Downtown Business Association, an active member of the Saratoga County Chamber of Commerce, and the Chamber of Southern Saratoga County. He holds an Associates Degree in Hotel Restaurant Management from Paul Smith’s College, and was on the Board of Directors for Lettuce Entertain You Enterprises from 1997-2001.
